Chicken Bacon Ranch Tacos

     This recipe is one of my personal favorites. It has everything you love in one dish, the bacon, the chicken and the ranch. I will go through how to make a simple ranch if that's something you'd be interested in. However, this works well with the ranch of your choice, and or salsa.


Ingredients 

  • 2 Chicken breasts
  • 1 Pack of bacon
  • Pack of your favorite corn tortillas 
  • Shredded Mexican cheese
  • Shredded lettuce 
  • Diced tomato 
  • 1 Tablespoon cajun seasoning
  • 1 Tablespoon garlic powder or garlic salt
  • Salt a pepper to taste

Optional for ranch

  • 1 / 2 Cup Sour cream
  • 1 / 2 Cup Mayonnaise 
  • Garlic powder or salt to taste
  • A few green onions (cut into small pieces) 

Steps

  1. Heat a frying pan to Medium / Medium high heat. Cut the bacon into small pieces and add to the hot pan.
  2. While the bacon is cooking, cut the chicken breast into small cubes, roughly inch pieces. 
  3. When the bacon is done, remove it along with half of the grease left behind. The other half, leave in the pan and add the chicken to begin cooking.
  4. Season the chicken with the cajun seasoning and garlic along with salt and pepper. Cook until the chicken is done. You can tell by seeing if the chicken is white all the way through. It will begin to brown on the outside.
  5. Get your diced tomato and lettuce ready.
  6. Heat up the amount of tortillas you would like making sure to add cheese to the top side. Heat until the cheese starts to melt.
  7. Assemble your tacos and add your sauces on top and enjoy! Follow the steps below if you would like to make your own ranch (I recommend trying it at least once).

Steps for ranch

  1. Combine the equal parts of sour cream and mayonnaise along with the garlic and mix.
  2. Taste and see if you need more garlic, if so add it now and mix again.
  3. Repeat this until you get your desired taste.
  4. Add the chopped green onions (be sure to cut off the bad ends) and mix one last time
  5. ENJOY!
